CUP CAKES
If I'm being really honest... I don't get it, never really have. I like cakes and I guess i like cupcakes..... but my dessert of choice..... has always been the
DQ BLIZZARD.
(Who's with me???)
Regardless, I have tried out some yummy recipes for healthy home made versions of these little devils.... and have made some changes to a few and here's what I have come up with.
~CHOCOLATE CUPCAKE~
2C spelt flour
dash of each Baking soda & powder
1tsp Cinnamon
3Tbsp Blackstrap Mollasses
2Tbsp creamed Honey
1.5 C plain Greek yogurt 0% fat
.5C pumpkin puree
3-5 egg whites
2Tbsp carob chips
Mix:
All dry together, including carob chips
Add the wet to the dry, mixing well
This will make 12 full sized or 18-24 smaller cupcakes
Baked for 15 minutes @ 350, checking occasionally
For a killer calorie wise icing, I use : damyhealth cream cheese icing
* I tend to not use the honey in this recipe, but by all means you can*
Calories before icing:
Per 2/ small or 1 large
97 calories
1.25 g fat
16g carbohydrate
2.5g protein
