Banana Bread sans FAT and SUGAR

Who doesn't love a good banana bread??? 
Honestly now, its delicious... always.... but rarely is it GOOD for you.


TODAY, it becomes good for you:)


This recipe can be played with a bit once you master the basics. 
Bake @ 350 for 50 minutes


DRY ingreds:
2C flour - I use SPELT* another option is oat flour*
dash of baking soda and powder
dash cinnamon ( 1 tsp )
1/2C carob chips
1 packet stevia
WET ingreds:
1/3C almond milk
1 tsp vanilla
1.5 tsp lemon juice
1/2C no sugar maple syrup( I use E.D Smith)
2C mashed banana ( packed in to 2C)


Mix the dry with the wet BY HAND, and DO NOT over mix 


* this will make your bread very tough and un enjoyable:(


I have played with the basics and changed it up slightly, here are some options.


-Instead of carob chips, replace with frozen blueberries
-omit 1C spelt flour, replace with 1/3 C coconut flour
-Add 1/3C 0% plain greek yogurt for added protein and moisture 
- In place of the greek yogurt ( listed above) use pumpkin puree or apple sauce


*This loaf was made with blueberries in place of carob chips*
mmmmm delicious :)
This loaf provides 10-12 slices
