Fresh Quinoa and Bean Salad
This can be made with either White or Red Quinoa.... Tonight, I opted for red as I always cook with white.
What you NEED:
1/2 C uncooked Quinoa
1 C water
1/2 Black beans or Chic Peas
1 Tbsp Parsley
1 Tbsp chopped Walnuts
1 Tbsp Olive Oil
1 Tbsp Balsamic Vinegar
HOW TO:
1- Prepare your Quinoa according to the instructions ( Boil 1 cup Water, add quinoa, bring to a boil again, reduce, cover for 5-15 minutes, depending on red or white Quinoa, fluff with fork when done)
2- Place cooked quinoa in bowl, and add beans
3- Mix your Oil, Vinegar and lemon juice together and drizzle over mixture. MIX WELL
4- Add your parsley and enjoy
